Spring 2017, our cowboy Pierre-Paul met Sam from Exchange Brewery in Ontario. These great minds diverge and the idea germinates to brew together a wild fermentation from must inoculated at St-Tite, which can remind of Lambic and homemade yeasts resulting from different spontaneous fermentations of Niagara. June 2018, Niagara team descends on St-Tite to brew and barrel. 16 months later, this divine brew is finally offered to you: a well acidulous profile supported by a pleasant cereal side and lemony acidity typical of wild yeasts.
