L’Empirique is an experimental collaborative project between Matera, the Labo – Brewing solutions and À la Fût.
L’Empirique is an experience of the senses where everyone’s knowledge has been put to good use: Matera has refurbished and heated the barrels; the Lab has isolated Brettanomyces yeasts from wines, kombuchas and others; and À la Fût brewed the beer and made it mature. Testing different yeast strains using different fermentation processes in different types of barrels, this is the task before us.
Together, almost 2 years later, we offer you in this can the best of the experiment, assembled with two IPA, one from Matera and one from À la Fût.
