To mark the Bièrologue’s 5th anniversary and À la Fût’s 10th, a festive brew had to be created! David is very fond of autumn beers, so the apple became the basis of our inspiration. A natural fermentation yeast from Cidrerie Milton was the premise for this wild fermentation. Pressed Dolgo apples were added to a blend of various oak barrels before they were left to mature over a period of 12 months. The result? A beautiful golden colour, a slightly malty taste, a well-balanced acidity, and a smooth apple finish reminiscent of cider. To be enjoyed under the warm rays of the autumn sun!
